Seasonal quarterly menus including descriptions, verbiage, and dietary restriction notices (for example, indications of which can be made vegetarian or gluten-free
Recipe testing, (either on site, or independently)
Purveyor suggestions, as needed
Consistency/Tracking:
Cost of goods spreadsheet creation
Recipe cards/Cook sheets
COG spreadsheets cross linked and updated in real time to indicate profit margin based on portion size based on purveyor price sheets
Other systems:
Ordering/par spreadsheets based on projected cover counts
Scheduling spreadsheets
Kitchen staff training
Kitchen organization (prep lists, small wares/dry goods organization)
